Ingredients

1/2 lb Lion's Mane Mushrooms

1 Egg
1/4 cup Breadcrumbs

1/4 cup onions, finely diced
1 tbsp mayonnaise

1 tsp ketchup
3/4 tsp bay seasoning
6 tsp salt

1 tsp pepper
1 tsp paprika
1/2 tsp garlic
1/4 tsp onion powder
1 tsp dijon mustard
1 tbsp parsley

2-3 tbsp cooking oil
1/4 cup mayonnaise
1 tbsp dill pickle relish
1/3 tsp bay seasoning
Directions
Shred Lion's Mane mushrooms by hand into small pieces, resembling the texture of flakey crab.
In a large bowl, combine egg, mayonnaise, soy sauce, ketchup, bay seasoning, salt, pepper, paprika, garlic, onion powder, dijon mustard, parsley, salt, and pepper. Mix until all ingredients are fully incorporated.
Mix in Lion's Mane mushrooms until fully incorporated.
Mix in breadcrumbs until fully incorporated.
Form mixture into three or four equal sized round flat patties, about 1/2 to 3/4 of an inch thick.
Heat oil in pan on a medium-high heat, cook patties for approximately 2-3 minutes per side.
Optional: Add a garnish of lemon slices.
Recipe Note
For storage after cooking, you can transfer your cakes into an airtight container and store in the refrigerator for up to 48 hours.
