White Navy Beans, also known as Pea Beans, are a very popular small, oval-shaped, and quick-cooking pulse. They cook down into a very creamy texture and have a subtle warm and neutral flavour. Navy beans are ready to harvest in Ontario in early September, where they are then dried for longer storage. White Navy Beans are very versatile due to their ability to really soak up the flavours they are put with. They are small and can be boiled, and pureed. They are excellent for mashing and for thickening soups, stews, ragouts, and dips. They are commonly enjoyed baked and can be found in dishes like pork and beans and summer salads. White Navy Beans go by many names, however they received their name from being a staple food used by the US Navy in the early 1900's. Navy beans originate from Peru and were first domesticated in the Americas. They are known for being the bean with the highest amount of fibre. These small white beans are popular with Ontario and Manitoba farmers, and most of these are exported to the United Kingdom for baked beans. The rest are sold domestically. White beans have been grown in Ontario since the early 1900's.
