French Fingerling potatoes have thin red skin and firm, waxy light yellow flesh. They hold their shape well when cooked and can be roasted, boiled, and steamed. They grow to cylindrical tubers 6-7" long and have an earthy, nutty, and buttery flavour. They do not need to be peeled due to their thin skins.
This variety was developed and released commercially in France in the 1950's. Its first name was 'Roseval', as it is a cross between the rose and vale varieties. Its nickname, 'Nosebag', comes from the rumour that this variety was smuggled into the United States in the nosebag of a horse. It was later called the French Fingerling, and is widely popular in France and the United States.
