Cherokee potatoes are white fleshed with flaky, yellow shin. They are small to medium in size with a round but somewhat flattened shape. They have medium starch content with a slightly creamy and dense texture, which holds firm when cooked and makes them perfect for mashing, salads, steaming, boiling, and frying. Their low sugar content and mild, subtly sweet flavour makes them an excellent all purpose potato.
The Cherokee cultivar was developed in 1941 by the United States Department of Agriculture in Maine, and was released to the market in 1953.
