Top sirloin is one of the few lean cuts that does not need marinating or tenderizing (as long as you do not over-cook it!). We recommend a simple seasoning of non-iodized salt, and a few good cracks of black pepper before a reverse sear on a cast iron pan. It would be great served with a simple chimichurri, or some sauteed mushrooms.
