It is a mid-season potato with relatively higher dry matter, and is great as a boiled salad potato, or baked for casseroles.\u003c\/span\u003e\u003cbr\u003e\u003cbr\u003e\u003cspan\u003ePotatoes purchased in supermarkets are often treated with chemicals to prevent sprouting (or “eyes”). These potatoes have been harvested in the Fall and are NOT chemically treated and are considered to be alive. When properly stored, sprout growth is minimal, but if sprouting happens, simply remove them and cook as usual!
