Elderberries are the fruit of the elderflower bush that grows prolifically in subtropical climates. In Britain, this plant is often grown as hedges. The stems, leaves, bark, and roots of this plant can be quite toxic, especially when consumed regularly or in large quantities. The berries, however, are edible and sweet, especially when de-stemmed and heated.
Elderberries are excellent in baked goods, made into jams, jellies, and compotes, or concentrated into syrups, drinks, and cordials. The skins break down easily, and the colour is a deep blue-purple. The pigmentation of the berries is strong enough to be used as a natural dye, and the berries are thought to have medicinal properties in traditional folk medicine.

Although the size and direction of our company has changed dramatically over the years, our concept and commitment has not. It has always been Mikuni’s goal to provide our customers with the highest quality of unique and sustainable wild foods. Inasmuch as the organic food movement has garnered attention in the last decade, at Mikuni we believe that we are at the beginning of another movement, one that explores the abundance of richly flavoured foods found exclusively in the wild.
