Fennel, a member of the carrot family, is a fragrant herb with an edible bulbous stalk. The needle-like leaves are similar to dill and can be used in similar ways. Fennel is similar in taste to anise and licorice. Fennel is ready to harvest in Ontario in mid to late Summer.
All parts of the Fennel plant are edible and used in cuisines. The leaves can be used fresh or dried as a fragrant herb. The bulbous stalk portion can be used as a crisp vegetable that can be sauteed, stewed, braised, grilled, or eaten raw. Tender young leaves are used for garnishes, as a salad, to add flavor to salads, to flavor sauces to be served with puddings, and also in soups and fish sauces. The seeds, also know as Fennel 'fruits' can be used as a spice to add extra fennel flavour and are excellent in sweet desserts and are enjoyed as mints in many cultures.
Fennel originates in the coastal regions of the Mediterranean and can be found both cultivated and growing naturally in roadsides and pastures in Europe, central North America, Asia, and Australia.
