Yukon Gold potatoes have thin, smooth, brown-yellow skin and yellow flesh. The flesh is waxy and moist, with a sweet flavour, and they are ideal for boiling, baking, and frying. They can also be grilled, pan fried, and roasted.

This cultivar was developed in the 1960s by Garnet Johnston in Guelph, Ontario, Canada with the help of Geoff Rowberry at the University of Guelph. It was released to the commercial market in 1980, and is the first Canadian-bred potato variety to be promoted, packaged, and marketed with the name right on the pack. This variety was named "Yukon" for the Yukon River involved in the Klondike Gold Rush in Northern Canada. 'Norgleam' is a parent cultivar.
