Bioitalia is a family-owned company in Sarno, near Salerno in southern Italy. It grew from Giustino Di Costanzo selling oil from a small van at the foot of Mount Vesuvius in 1950 into an organic food maker that has worked with organic farmers since 1994.
Caserecce are short, twisted rolls made from Italian organic durum wheat and cut through bronze, which gives the pasta a porous surface that grips sauce. Toss them with a roasted vegetable sauce in the fall, with sausage and greens, or with a simple tomato and basil sauce.
