Pasture-raised Ontario lamb from small farms where flocks graze on grass through the season. Our lamb selection includes rack of lamb, leg cuts, shoulder roasts, ground lamb, chops, and stewing cuts from Ontario farms. Ontario lamb is seasonal - the primary season runs spring through fall, with some availability through winter from farms with storage capacity. Lamb raised on pasture has a noticeably different flavour profile from feedlot lamb: leaner, with more complexity.
