Gunn's Hill Artisan Cheese in Woodstock, Ontario, is run by Shep Ysselstein and Colleen Bator, who make Swiss-style cheeses from the milk of a family dairy farm in Oxford County. Their Sheep Gouda is a creamy, Gouda-style cheese made with sheep's milk and aged six months, until its delicate, sweet flavours develop.
Shave it over roasted squash, pair it with quince paste, or serve it with figs and crusty bread.
