H.O.P.E. Eco Farms is an Amish-community cooperative near Aylmer, Ontario, and their sheep's milk is made into cheese in partnership with Gunn's Hill Artisan Cheese in Woodstock. Shepherd's Harvest is a washed rind sheep's milk cheese aged ten months, creamy and similar in style to Saint Paulin.

It goes well with fruit, honey and nuts, and pairs with light wines and beers.
