Gunn's Hill Artisan Cheese in Woodstock, Ontario, is run by Shep Ysselstein and Colleen Bator, who make Swiss-style cheeses from the milk of a family dairy farm in Oxford County. Tipsy starts as their original Oxford's Harvest, a hand-crafted Mutschli-style cheese that turns mild, creamy and lightly lactic and buttery after six weeks on cedar planks. It is then soaked for several days in Palatine Hills Cabernet Merlot, which gives the edible rind its rich flavour.

It is a favourite of wine lovers. Serve it on its own, or melt it into a grilled cheese for a fall supper.
