Kendal Hills Farm is a 70 acre family farm near Orono, where Dave and Emily raise their chickens on pasture, free to roam by day and roost in the evenings. The birds graze on grubs and insects and are fed non-GMO, non-medicated feed. Each bird is hand-caught and taken to a provincially inspected, family-owned small processor in Omemee.
Chicken liver is rich and creamy when it is cooked gently. Saute it with onions until just pink in the middle, whip it into a classic pate, or fold it into a ragu with red wine and thyme.
