Blythe Weber learned to preserve from her grandmothers, Anne and Iva, and now makes small-batch jams with Adam Smith on their family farm in Trent Hills, Ontario. They use pots and spoons, not vats and conveyor belts.

Ontario peaches go into this jar so a late-summer peach can be enjoyed in the middle of winter. Spoon it over toast, shortbread or yogurt, swirl it into ice cream, or spread it on a buttered croissant.
