Dave and Keri Nicolaou are third-generation beekeepers who keep about 200 colonies on 100 acres of native meadow in Millbrook, Ontario. Their basswood honey is a small, early crop gathered when the linden trees bloom from late May into early July, so the harvest shifts a little with every season.

It is pale and delicate with a light, minty note. Stir it into a cup of tea, drizzle it over strawberries and ricotta, or spoon it onto warm toast on a slow summer morning.
