Glengarry Fine Cheese in Lancaster, Ontario, was founded by Margaret Peters Morris on her family's farmland, where she began making cheese from the farm's milk in the early 1990s. Lankaaster is a semi-firm cheese shaped as a loaf, made to be sliced onto bread the way Dutch farmers do. The extra aged version has a granular quality, with a more intense sweetness and earthy undertones.

Serve it in small pieces with a pear and a glass of something robust.
