Glengarry Fine Cheese in Lancaster, Ontario, was founded by Margaret Peters Morris on her family's farmland, where she began making cheese from the farm's milk in the early 1990s. Their cheeses age in European-designed aging rooms. Lankaaster is a semi-firm cheese with a slightly open texture, shaped as a loaf so it can be sliced and eaten on bread the way Dutch farmers do. A specific starter culture gives it a flavour typical of cheese made on Dutch farms earlier in the last century.
Slice it thick for sandwiches, or serve it with mustard, pickles and dark bread.
