Bioitalia is a family-owned company in Sarno, near Salerno, that began with the Di Costanzo family selling oil near Mount Vesuvius in 1950. Since 1994 it has made organic foods, including pasta from Italian organic durum wheat.

These lasagne sheets are bronze-cut, so they have a texture that holds sauce well. Layer them with ragu and bechamel for a Sunday dinner, or with roasted squash, spinach and ricotta once the cooler weather arrives.
