Blythe Weber and Adam Smith run Spade and Spoon, a small batch farm and preserves company in Trent Hills, Ontario. Their syrup comes from the 20 acres of sugar maple bush on their own farm, and they have been selling at farmers markets since 2009.
Very dark grade carries a strong maple flavour. Pour it over pancakes, then try it in coffee, in baking and cooking, or over yogurt and granola.
