Kendal Hills Farm is a family farm on 70 acres of rolling woodland in the Oak Ridges Moraine near Orono, committed to regenerative agriculture. Its Kune Kune pigs are raised on shaded pasture and fed non-GMO feed.
Back fat is a thick, firm layer from under the skin along the back, sold un-rendered. It has a rich, savoury aroma and flavour, and is best rendered into a cooking fat for meat and vegetables or cut into homemade sausages. Chop it small, cook over low heat until melted, then strain and chill.
