Kendal Hills Farm is a family farm on 70 acres of rolling woodland in the Oak Ridges Moraine near Orono, committed to regenerative agriculture. Its Kune Kune pigs are raised on shaded pasture and fed non-GMO feed.
Leaf fat is soft fat from the loin and kidney area of the pig, sold un-rendered. It makes flaky leaf lard for baking, with a neutral aroma and flavour. Chop it small and cook over low heat until melted, then strain and keep the lard in the fridge for pastry, frying and pie crusts.
