Maison Orphée has been crafting oils and condiments in Québec City since 1983, and this certified organic red wine vinegar is one of their pantry workhorses. Sourced from Italy and left unpasteurized, it has a deep ruby colour, a rich aroma and a bright acidity.
It's the backbone of a good vinaigrette: whisk it with olive, walnut or sunflower oil and toss it with whatever greens you gathered this week. Use it to marinate meat, deglaze a pan, or stir up a shallot mignonette for oysters. Good vinegar mellows and grows more complex with time, so a bottle in your home pantry only gets better.
