Maison Orphée calls this "the Swiss army knife of vinegars," and it earns the name. The Québec City producer sources this certified organic white wine vinegar from Italy and leaves it unpasteurized, so it keeps the colour and some of the aromas of the wine it's made from.
Its clean acidity brightens rich sauces like homemade mayonnaise and hollandaise, and it's a natural for pickles, preserves and marinades. Plain white vinegar is just as sharp but has far less aroma, so reach for this one when flavour matters.
