Century Game Park is the Potter family farm near Warkworth in Northumberland County, worked since 1837 and now in its sixth generation. Rod and Elaine Potter moved the farm from dairy to bison and elk in the late 1980s, and the animals graze the rolling hills there.
Each pack holds four patties of about 4 oz. Bison is a lean red meat, so cook the patties on a hot grill or pan and pull them off before they dry out. Pile them with late-summer tomatoes and Ontario greens, or crumble leftovers into a chili once the weather turns, and gather everyone around the table.
