Empire Cheese & Butter Co-op in Campbellford, Ontario, has made cheese since the late 1870s. It is the only cheese plant operating in Northumberland County and is owned by local dairy farmers, who elect a board each year to run the factory. This is their cow's milk feta.
Crumble it over roasted vegetables, a harvest salad or warm grain bowls, or bake it with tomatoes and olive oil.
