Glengarry Fine Cheese in Lancaster, Ontario, was founded by Margaret Peters Morris on her family's farmland, where she began making cheese from the farm's milk in the early 1990s. Iron Horse is a traditional cheddar made in 15kg wheels from whole Brown Swiss cow's milk, bound in natural muslin and aged longer for this release. It is creamy and well balanced, with savoury and sweet notes and a rich yellow paste that lingers on the palate.

Serve it in small pieces with apples, chutney and a dark ale, or grate it over a baked potato.
