Empire Cheese & Butter Co-op in Campbellford, Ontario, has made cheese since the late 1870s. It is the only cheese plant operating in Northumberland County and is owned by local dairy farmers, who elect a board each year to run the factory. Their cheese is made in open-style vats, which they feel gives it a better flavour, and this white cheddar is aged two years.
Slice it with a crisp apple, or set it on a board with chutney and crackers.
