Cross Wind Farm is a family-run goat dairy in Keene, Ontario, about 15 minutes east of Peterborough, run by Kevin and Cindy. They rebuilt an 1800s barn in 2006 and have made small-batch goat dairy ever since. This is their Homestead goat feta: mild, creamy and semi-soft, packed in a salt water brine that keeps it fresh for 5 months or more.
Crumble it over roasted squash and beets, fold it into fall salads or bake it with tomatoes. Graze on a few cubes with olives and warm bread.
