H.O.P.E. Eco Farms is an Amish-community cooperative near Aylmer, Ontario, and their water buffalo milk is made into cheese in partnership with Gunn's Hill Artisan Cheese in Woodstock. Elgin Buffalo is a six month old Gouda made with creamy buffalo milk.

Melt it into a grilled cheese, or slice it onto a board with apples and rye crackers.
