Enright Cattle Company is a fourth-generation family farm near Tweed, Ontario, where Kara and Daryl raise a small herd of beef cattle and dry age their cuts for about 21 days. These sirloin steaks are cut from the loin, about half to three quarters of an inch thick, one steak per package.
Grill or pan fry them, or slice them into a stir fry or fajitas. They also make a very good steak sandwich, ready for friends to gather over.
