Forbes Wild Foods is a Toronto company that works with a network of trained foragers and harvesters across Canada to bring wild foods to kitchens and shops. This dulse is sustainably harvested and naturally dried in Nova Scotia, where the high tides of the Bay of Fundy create ideal growing conditions. Dulse is a red seaweed that keeps its red-purple colour when dried, and has long been a traditional food of the Mi'kmaq.

After a quick soak, dulse turns soft and gives a savoury-sweet, umami-rich flavour that reminds some cooks of bacon. Add it to a vegan chowder or potato fish cakes, or toss strips in a little oil and fry until crisp for a smoky topping on soups and sandwiches. A lovely ingredient to gather for cool-weather cooking.
