Kendal Hills Farm is a 70 acre family farm near Orono, where Dave and Emily raise their chickens on pasture, free to roam by day and roost in the evenings. The birds graze on grubs and insects and are fed non-GMO, non-medicated feed. Each bird is hand-caught and taken to a provincially inspected, family-owned small processor in Omemee.
Chicken feet are the quiet secret behind a stock with real body. Simmer them low and slow with onion, carrot and bay, and the broth sets to a soft jelly when it cools. Good for soups, ramen and sipping broths through the colder months.
