Filsinger's Organic Foods is a family farm in Ayton, Ontario, started by Alvin Filsinger, one of the early voices for organic farming in Canada. The Becker and Weber families carry it on, growing more than 30 varieties of organic apples without herbicides or pesticides.
This larger jar suits a busy kitchen. The sauce is made from hand-picked apples steamed with the skins on, so it is simple and fruity. Serve it warm with roast pork, stir it into yogurt, or use it in place of some of the oil in fall baking.
