Blythe Weber and Adam Smith run Spade and Spoon, a small batch farm and preserves company in Trent Hills, Ontario. Their syrup comes from the 20 acres of sugar maple bush on their own farm, and they have been selling at farmers markets since 2009.
Amber grade has a rich, mid-range maple flavour that suits pancakes and waffles best. It is just as good over oatmeal and roasted squash, or stirred into a salad dressing.
