This oil began as a family story: four olive trees in the backyard of a home in Tunisia, whose oil the family shared each harvest. After the founders moved to Canada and could not find an olive oil of the same quality, they began sharing their own. It was sold as Phoeapolis Organics and is now sold under the name Four Trees.
It is a single origin, unblended oil from Chemlali olives handpicked in Tunisia's Sahel region and, the producer says, harvested early and first cold extracted. Expect fresh fruit aromas and a mild peppery finish. Drizzle it over hummus and warm vegetables, dress a salad, or use it for everyday cooking and marinades. Gather a bottle for the home pantry.
