Gunn's Hill Artisan Cheese in Woodstock, Ontario, is run by Shep Ysselstein and Colleen Bator, who make cheese from the milk of a family dairy farm in Oxford County. Brigid's Brie is a soft, surface-ripened cow's milk cheese, aged six weeks and handled gently to keep its creamy centre. It is made without stabilizers or preservatives, so it is sold with a "best between" date.
