Forbes Wild Foods is a Toronto company founded by Jonathan Forbes, with a public shop on the Danforth. Its pickers live in rural and remote communities across Canada, and they harvest only wild foods that grow in abundance.
Chokecherries grow across most of the country and are far too tart to eat raw. Cooked into jelly they turn sharp and flavourful but never sour, a farmhouse favourite for generations. Spread it on toast, whisk it into a pan sauce for pork or duck, or spoon it over a slice of cheesecake.
