Glengarry Fine Cheese in Lancaster, Ontario, was founded by Margaret Peters Morris on her family's farmland, where she began making cheese from the farm's milk in the early 1990s. Their cheeses age in European-designed aging rooms. Fleur-en-Lait is related to the French St-Paulin: a semi-soft cheese with a thin, bright orange rind. The pungent rind surrounds a robust yet sweet and fruity interior.
Serve it with fruit and baguette, or melt it into a gratin or a croque monsieur.
