Marchand and Corin of Garlicloves planted one dozen Ontario garlic bulbs in 2012 and spent the next few years collecting and tracking varieties. Today they grow garlic by hand in the Kawartha Lakes and near Minden in the Haliburton Highlands.
This powder is pure dehydrated Ontario garlic, stored as chips and ground as needed so it stays fresh. Ten pounds of peeled cloves make just one pound of powder, so a little goes a long way. Sprinkle it on roasted vegetables, stir it into soups and dips, or add it to a rub near the end of cooking.
