Gunn's Hill Artisan Cheese in Woodstock, Ontario, is run by Shep Ysselstein and Colleen Bator, who make Swiss-style cheeses from the milk of a family dairy farm in Oxford County. Oxford's Harvest is their mild, creamy, hand-washed rind cow's milk cheese, here made with generous amounts of chipotle morita for a distinct, warm flavour.
It melts well into chili, quesadillas and baked beans, and it is easy to enjoy on its own with crackers.
