Kendal Hills Farm is a 70 acre family farm near Orono, where Dave and Emily raise their birds on pasture, where they graze on grass and insects. These soup chickens are retired laying hens, older birds with more developed muscle, which means deeper, richer flavour in the pot.
Made for stock, slow braises, soups and stews. The longer you cook them the better they get, and a long, slow simmer gives a broth that is hard to find on a shelf. Pick the meat off the bones for pot pie or chicken and rice.
