Kendal Hills Farm is a 70 acre family farm near Orono, where Dave and Emily raise their chickens on pasture. The birds spend their days out on grass, grazing on grubs and insects, and roost in the evenings. They are white rock chickens, fed non-GMO, non-medicated feed, and raised under the Chicken Farmers of Ontario Artisanal Chicken Program, which lets small farms raise birds to a higher standard.
A whole bird for the Sunday roast, with carcass left over for stock. Rub it with butter and herbs and roast it over root vegetables, or break it down and gather the family around a pot of chicken and dumplings.
