Glengarry Fine Cheese in Lancaster, Ontario, was founded by Margaret Peters Morris on her family's farmland, where she began making cheese from the farm's milk in the early 1990s. Bridge End Bloomy is made from full fat Brown Swiss cow's milk and moulded into individual three inch square cheeses with a wrinkly bloom. It carries flavours of butter, herbs and mushroom, and at three weeks the paste is creamy and unctuous.
Serve it at room temperature with crusty bread and jam, or bake it briefly and spoon it over roasted vegetables.
