Empire Cheese & Butter Co-op in Campbellford, Ontario, has made cheese since the late 1870s. It is the only cheese plant operating in Northumberland County and is owned by local dairy farmers, who elect a board each year to run the factory. Their cheese is made in open-style vats, and this cheddar is aged five years.

It is sharp and crumbly, best served in small pieces with apples, pears and a dark beer.
