Empire Cheese & Butter Co-op in Campbellford, Ontario, has made cheese since the late 1870s. It is the only cheese plant operating in Northumberland County and is owned by local dairy farmers, who elect a board each year to run the factory. This is their grated Parmesan.
Stir it into risotto, sprinkle it over pasta and roasted vegetables, or add it to a baked casserole.
