Empire Cheese & Butter Co-op in Campbellford, Ontario, has made cheese since the late 1870s. It is the only cheese plant operating in Northumberland County and is owned by local dairy farmers, who elect a board each year to run the factory. This is their cow's milk cream cheese.
Spread it on a morning bagel, whip it into a dip with fresh herbs, or use it in a fall cheesecake or a creamy pasta sauce.
