Empire Cheese & Butter Co-op in Campbellford, Ontario, has made cheese since the late 1870s. It is the only cheese plant operating in Northumberland County and is owned by local dairy farmers, who elect a board each year to run the factory. Their cheese is made in open-style vats, and this is their medium marble cheddar.
It is an easy everyday cheese for grilled cheese, burgers and lunchboxes.
