Empire Cheese & Butter Co-op in Campbellford, Ontario, has made cheese since the late 1870s. It is the only cheese plant operating in Northumberland County and is owned by local dairy farmers, who elect a board each year to run the factory. This is their smoked Gouda.
Grate it over baked potatoes, fold it into mac and cheese, or melt it onto a burger.
